"Red Lobster's Shrimp Scampi"
So here it is :
Step 1 : Buy your shrimp. this recipe will be for large shrimp (21-25 per pound) red lobster's shrimp might be mediums (26-30 per pound), the smaller the shrimp, the less the cooking time. remember: bigger-longer; smaller-shorter.
Step 2 : Peel and Devein shrimp. Do not slit in half, just the top. Enough for the sand track to rinse out. Lightly batter with onion powder garlic powder and flour then set them apart not touching each other on wax paper.
Step 3 Find the right pan. you want a pan that will allow all of the shrimp lie flat on the bottom, apart none stacked on top of one another. 10 or 12 inch diameter
Step 4 : Take 1 cup of white wine, and a stick of real butter and put them into a bowl and microwave them until everything is very warm. Don't over-microwave them, just very warm. Add 3 dashes of mixed Italian herb season and with a small whisk stir up the bowl thoroughly.
Step 5 : Pre heat stove top to 8 on a scale to 10. When stove top is ready, set pan on and pour 2/3 cup of mixture and bring to a high heat. Then lay your shrimp on it’s side. The heated mixture should be about ½ way up the side of the shrimp. Do not completely cover entire shrimp in pan. You should hear a frying sound as you put them in. You should be able to get about 15 shrimp in there.
Step 6 : Fry for 2 ½ min then flip. Here is when you throw in your 3 tsp of minced garlic. Fry for 2 min and remove. Place shrimp into a low edge bowl. Pour excess mixture ½ way up the side of the shrimp leaving the top exposed. NOTE : If garlic stars to turn brown /black you’ve cooked them to long. The shrimp should look light brown slightly breaded Repeat process til you are out of mixture.
